3-day Basic HACCP Training Class for the Seafood Industry

USDC/NOAA’s 3-day HACCP Class, available in English and Spanish upon request, meets the body of knowledge requirements established by the U.S. Food and Drug Administration for HACCP training as outlined in 21 CFR Part 123.10, incorporating the training curriculum developed by the Seafood HACCP Alliance, a national committee of which the USDC/NOAA is a founding member.  USDC/NOAA’s 3-day workshop is designed to demystify the basic principles of HACCP combining lectures and hands-on practical exercises.

In addition to gaining an understanding of basic HACCP theory, participants will learn to use the 4th edition of FDA’s Fish and Fishery Products Hazards and Controls Guidance (FDA Guide) to apply HACCP principles in order to meet FDA’s Seafood HACCP Regulatory requirements.

Course Hours and Participation Requirements

The 3-day HACCP Classes are conducted from 8:00 a.m. – 5:30 p.m. each day. To qualify for a Certificate of Attendance or Certificate of Completion, participants are required to be present for all contact hours, finish in-class exercises, submit two homework/learning assessments and complete a final exam.  Please scroll down for specific requirements for a Certificate of Completion and the Certificate of Attendance.

Requirements to qualify for a Certificate of Attendance or Certificate of Completion

Certificate of Attendance
Certificates of Attendance meet the training requirements outlined in 21 CFR Part 123.10, the FDA Seafood HACCP Regulation.  To qualify for this certificate, individuals must:

  • Be present for all contact hours
  • Finish and submit in-class exercises, homework learning assessments and the USDC/NOAA HACCP examination.
  • Meet a weighted average of 64% or greater, with no one assessment less than 60% for Learning Assessments and USDC/NOAA HACCP examination.

Certificate of Completion

Certificates of Completion meet the training requirements outlined in 21 CFR Part 123.10, the FDA Seafood HACCP Regulation and the USDC/NOAA Training Requirements for a NOAA Approved Establishment. To qualify for this certificate, individuals must:

  • Be present for all contact hours
  • Finish and submit in-class exercises, homework learning assessments and the USDC/NOAA HACCP examination.
  • Meet a weighted average of 80% or greater, with no one assessment less than 60% for Learning Assessments and USDC/NOAA HACCP examination.
